Headed out for a weekend camping trip with your family? Don’t spend your time cooking all weekend when you should be relaxing or exploring the great outdoors with your kids! We are making it a cinch with an easy weekend camping menu that’s quick and partially prepared at home before you leave. We are also sharing the grocery list to save you even more time! Some meals have options to choose from.

    Friday Night Dinner – Hot dogs or Hamburgers

    You’ve arrived at the campsite, had the obligatory argument with your spouse when setting up camp/backing the trailer, and you’re just ready to start the weekend. Let’s make it easy tonight with a couple options that are camping go-to’s – but s’mores are on the menu regardless of course!

    Option 1: Hot dogs and S’mores

    Get the fire pit fired up or save time and pull out your Coleman travel grill.

    Option 2: Hamburgers and S’mores

    I’d recommend bringing along a travel grill for this option as well. You could patty the burgers up before you leave home to save time at the campsite!

    Saturday Breakfast – Omelettes

    This is a quick and easy breakfast that’s always on our weekend camping menu. It’s also easy for a large crowd! Crack the eggs at home and store in a plastic container in the fridge. Using pre-made pico de gallo is my little secret for whipping up this breakfast super quick!

    Saute your ground breakfast sausage, mushrooms, and pico de gallo separately. Grab a small skillet and coat with a small amount of butter and oil to keep the eggs from sticking. When your skillet is hot, use a ladle to dip a serving of pre-scrambled eggs into the skillet. As the eggs start to setup, use a spatula to carefully push the edges of the eggs from the side of the skillet, and tilt the skillet around to get the uncooked eggs to the edges as you push the cooked parts away.

    After a couple minutes, the majority of the eggs will be set. Add shredded cheese, breakfast sausage, and your veggies to one half of the eggs. Use your spatula again to flip the other half on top of the toppings. Let the cheese melt, and slide onto a plate. Easy peasy and you’re setup for all your camping friends and family to pick their own add-ins! I typically have two small skillets going at the same time if we are with a group.

    Pro Tip: Have picky eaters like me that turn their nose up when their egg is in the form of an omelette (even though that makes NO sense!)? You can easily cut off a few slices from the end of the sausage roll and fry them up as regular patties before you cook/break up the rest of the roll. And you already have eggs scrambled and ready to go in your container. Kid-friendly breakfast is ready to go!

    Saturday Lunch – Walking Tacos

    This is another super easy meal that is always on our menu. All it takes is browning some ground beef and you are DONE!

    Brown your ground beef and add taco seasoning per the package instructions. Cut open some individual bags of Doritos or Fritos, and add your toppings of choice. We like shredded cheese, lettuce, tomatoes, salsa, taco sauce, and sour cream. Lunch done, and back out for more fun!

    Saturday Dinner – Hawaiian Chicken Sandwiches or Fajitas

    Option 1: Hawaiian Chicken Sandwiches and Baked Beans

    We like to buy a bag of THIN frozen chicken breasts and thaw them in the fridge marinating in barbecue sauce overnight. Grabbing the thin ones ensures they get cooked through quickly. Grill the chicken breasts and canned slices of pineapple. Assemble and add any toppings (lettuce, tomato, mayo). Serve with a can of baked beans – we like Bush’s Grillin’ Beans that come in a few flavors.

    Option 2: Fajitas and Chips & Salsa

    This is another meal you can prep at home. Slice up chicken breasts (or buy the tenders already sliced), and slice up onions and green peppers. Mix them all in some fajita seasoning and a little oil, and store them in the fridge until you’re ready to use. I like to butter one side of my flour tortillas, add the grilled chicken and veggies and throw back on the grill for a few seconds to brown them like quesadillas. This meal would be super easy on a travel Blackstone griddle!

    Sunday Breakfast – Pancakes or French Toast Sticks & Sausage Links

    This is another meal where you want to have easy prep and clean-up, because you’re probably already thinking about heading home.

    Option 1: Pancakes & Sausage Links

    Again, this meal would be very easy on a Blackstone griddle!

    Option 2: French Toast Sticks & Sausage Links

    My sister-in-law bought frozen french toast sticks for a camping breakfast and I thought it was genius! She has an oven in her camper (we don’t but wish we did!), but I’m also seeing you can prepare these in an air fryer! So I’ll definitely be bringing along our air fryer on our next camping weekend to make this easy breakfast!

    Sunday Lunch – Lunch Meat Sandwiches or Chicken Salad Croissants

    Usually by this time of the weekend we are pretty much completely packed up and ready to head home. So we always do something that doesn’t require any cooking or clean-up, like lunch meat.

    Option 1: Lunch Meat, Chips, and Cookies

    I think this one is self explanatory 🙂

    Option 2: Chicken Salad Croissants

    I prep the chicken salad on Friday morning before we leave home. I like to make it easy by shredding up a pre-cooked rotisserie chicken from the grocery store. I much prefer the sandwiches if I chop up the chicken with a food chopper vs shred. Add it to your favorite chicken salad recipe – mine includes celery, grapes, onion, pecans, and mayo. Also, it seems like a little fancier option to me when I buy a box of mini croissants from the bakery 🙂
